Help with fonts with a background???

Hey guys, here is what Im trying to do. Im using AI CS3. I want to type letters of any font dont matter which one. Then I want to be able to cut a background for the letters to set on. I know im probably not saying this right or wording it correctly. Lets say the word " Business " I want to be able to cut it which I can without any problem, then I want to cut a different color " Business " that will be oversized and the background and I align the first onto the second. I hope this makes sense, please give me your ideas..Thanks guys..

1.type "business"

2. go to object(in menu bar) and down to expand

3. comand+c (copy) comand+B (paste in back),

4.change to a different color (you will not be able to see this until next step)

5.go to object, go down to path and click offset path and change the setting to your liking

6.click merge on pathfinder tab twice
