Need a little help here it's been years since I did one but going to do one for thanksgiving. I got the Cajun injector marinade but there was some kind of turkey rub we used on the outside of the turkey and for the life of me I can't find it in the store or remember the name of it. Does anyone know whats it's called?

I make my own rub for the outside using seasoning salt, cracked pepper, brown sugar, ground mustard seed. and anything else that sounds good.

I've used homemade rubs too, but if I am using a store bought seasoning I usually use Tony Chachere's Creole seasoning - it's basically a seasoned salt thats a little bit spicy. I just sprinkle all over the outside and also inside the cavity just before she gets lowered into the "hot tub". I like the components Bigfoot talks about putting in his. I don't think you can go far wrong as long as you get the bird shot up with the marinade - and don't go way overboard on the salt content.

Another tip is to make sure you clean out the fryer once its cooled off. Leaving the oil in for more than a day or 2 with the salt from the marinade and rub can eat through the pan.

I think I go with this Salt, Black Pepper, Garlic Powder and Cajun Seasoning.

Remember to use peanut oil - a friend one year decided to save money and use vegetable oil. It has a lower flash point they had some boil over and catch fire burning the hose off the fryer and the hose whipping around spraying burning fuel on the house until someone reached into the fiery mess and turned the fuel off. just a safety reminder

Turducken and a regular Turkey is on our plates for thanksgiving this year. Usually about 26-28 people at our families Thanksgiving.

+1 Electric fryers are the way to go. More temprature control with out having to babysit it.
